Rediscovering Pressure Cooking

Well, I made a great Tender Pot Roast Friday night in the Pressure Cooker and I actually was so impressed that tonight I played around and made Stuffed Chicken Breasts with Potatoes and Green Beans.  It was moist and juicy and the meat is so flavorful because the pressure cooking infuses the spices into the meat.  Pressure cooking is also very good for you because all the nutrients are retained.  I made the whole dinner in less than 30 minutes.  It was yummy.

Reuse and Recycle – A “new” truck for under $500

WOW.  I have the greatest husband in the world!  He built me a new (new to me) truck.  We bought a pretty 1992 Chevy C-1500 2 wheel drive pickup which needed an engine and transmission.  The cab interior is pristine and the body is clean with very few marks or dents (there is a small dent in one door which can easily be fixed).  Then he bought a 4 wheel drive which wasn’t in such great shape, but had an engine and transmission.  He took the engine and transmission out of the other and swapped the beds (the original was a long bed, but I wanted the 4 wheel drive so we had to go with the short bed).  He also stripped both trucks as he was swapping and sold the extra parts.  It was a lot of work, but the end result is a true “diamond in the rough.”  The truck is very quiet, purrs like a kitten, and drives like a dream.  All it needs is a paint job (I have chosen midnight blue metallic with blue pearl ghost flames), a cap for the back (the dogs are going to love their new ride!), and a new grill kit (because once it’s painted that old grill just won’t cut it).  We have a practically brand new cap, which is just a hair too big and are hoping to trade with someone who needs a larger one and has the smaller one we need.  In the end, by swapping and reusing parts and selling parts not needed, the truck has paid for itself.  We may end up spending a few hundred dollars when all is said and done, as we can buy a new grill kit with headlights and parking lights cheaper than we can buy used parts to put the grill back together and make it look pretty.  That will be the only part we purchased new, and if that costs $200, then I have a perfect running, BEAUTIFUL pickup truck for $200.  It doesn’t get better than that!  It’s gonna be soooooooooo SWEET!  Later down the road I want to add a chrome brush guard and a winch so my pretty little truck can pull you out of the ditch!  It is wonderful to have a perfect running vehicle and NO CAR PAYMENTS!  I’ll have the sweetest ride in town and it’ll be paid for mostly in my husbands blood, sweat and a lot of swearing!  He has paid a price for it.  He tore up his elbow pretty good and although he doesn’t complain, I can see him wince when he tries to pick up something.  Hopefully now that it is together and running, his elbow will get a much needed break and heal.  I’ll post some pictures soon and then will post again after she is painted and pretty!  I’m so proud of my husband.  He can make so much out of what others consider junk.  He took two pickups that were not running, which most would have considered to be junk and made them into something incredible.  When was the last time you bought a perfectly running pickup truck for under $500?  It will actually be under $300 when all is said and done.  AMAZING!

If you are facing foreclosure or are in foreclosure, don’t give up.  First, you do not need to leave your home when you are served with foreclosure paperwork.  Actually, that is a very bad thing for you.  Until you are givien an eviction date by the court at summary judgement, YOU are responsible for the maintenance and upkeep of your property and your city or county can hold you financially responsible.  I just read a news article where a sheriff was interviewed stating that homeowners who abandon their properties prior to summary judgement and eviction don’t realize that even though the property is in foreclosure, until it is granted, they are responsible.  Stay in your home and plan and prepare.

If you are facing foreclosure or are in foreclosure, here are some incredible websites to visit to educate yourself (and if you have one, your attorney) on foreclosure defense, foreclosure fraud (YES IT IS HAPPENING AND MORE OFTEN THAN YOU CAN IMAGINE), tricks the foreclosing parties are using (FOR EXAMPLE if you think you are working with them on a Loan Modification, BEWARE, they are double tracking…they will continue foreclosure proceedings parallel to “working” with you on modification and SURPRISE, the foreclosure will happen before the Loan Modification does.  All 50 states have ongoing investigations into foreclosure fraud and even investigations into your original mortgages because it may turn out that the people who are suing you for foreclosure DO NOT have any claim on your property!  The robo-signing and fraudulent paperwork is EVERYWHERE!  You, nor your attorney should accept ANYTHING at face value.  This is REAL and it is happening.  I checked and was amazed at the things I found.  You may be, too.

THESE SITES HAVE ENORMOUS RESOURCES FOR CHECKING RECORDS AND INFORMATION ON FRAUD…DO YOURSELF A FAVOR AND CHECK THEM OUT AND THEN CHECK YOUR PAPERWORK.  These blogs are the best resource for educating yourself about what you are going through and what you can do about it.  Most of the sites are run by attorneys and anti fraud activists.  The wealth of free information is amazing.  Check them out.

BRRRRRR.

Well, Sunny Florida is a balmy 51 degrees with a nice “go to the bone” breeze blowing.  Plants are wrapped and homemade Chili is on the stove.  Hubby requested it yesterday and I had already checked the freezer to find all the chili was gone!  He had to settle for Turkey Stew, but tonight it’s Chili to warm us to the bones!  It is supposed to go down into the 20’s-30’s tonight!  I sure did not move to Florida to be this cold!
