Fajitas

The only complaint I get is that I overstuff them and you have to eat them with a fork!  Other than that, they are a huge hit!  I lay bowls out in a line on the table or counter and everyone can help themselves and build their own fajitas!  It is easy and really fast.

  • 1 lb sirloin or round steak cut into strips
  • 1 lb boneless chicken cut into strips
  • 4 tablespoons butter or olive oil
  • 1 orange bell pepper cut into strips
  • 1 yellow bell pepper cut into strips
  • 1 red bell pepper cut into strips
  • 1 green pepper cut into strips
  • 1 small onion chopped finely
  • 1 small onion sliced
  • 2 teaspoons minced garlic
  • 1 pkg “Hot & Spicy” Taco Seasoning
  • 1 pkg Original Taco Seasoning
  • Shredded Lettuce
  • 1 large tomato diced
  • Fresh Salsa
  • Flour Tortillas
  • Sour Cream
  • Shredded Mexican Blend Cheese
  • Refried Beans

Follow directions on Taco Seasoning package to determine amount of water for two packages and mix that amount of water and both seasoning packets together in a measuring cup. Set aside.

Take 1/2 of each sliced pepper and set aside.

Using two skillets heat butter/oil and add beef to one skillet and chicken to the other.  Add half the chopped onion to each skillet.   Add 1 teaspoon garlic to each skillet.   Using the bell peppers you did not set aside, divide equally between skillets.   Cook and stir until meat is done and browned.**    Chicken juice should run clear when poked.   Pour half the taco seasoning and water mixture into each skillet. Bring to a boil and boil for 5 minutes stirring frequently.   Lower heat and simmer until liquid is cooked down and is just a thick sauce.  Cover and keep warm.

**While cooking the meat, slice onion, shred lettuce, dice tomato.   Place peppers, onion, lettuce, tomato, salsa, cheese, and sour cream in a line for building tortillas.

Heat Tortillas in Microwave by placing on a plate and covering with plastic wrap, leaving an escape slit for steam.  Microwave 1 minute on high.  Remove and place at the front of the tortilla building line.  Heat Refried beans and place next to tortillas with a plastic mixing spatula.

Build Fajitas by taking tortilla and spreading with refried beans.   Add meat mixture, cheese, lettuce, peppers, onion, tomato, salsa and sour cream.  Roll Tortilla up AND EAT!!! YUMMY!

Note these are also good if you do not like the hot and spicy seasoning, just use two packages of original taco seasoning.   If you or your guests like it really hot, put the bottle of tabasco sauce or slice up jalepeno peppers and put at the of the line and let them have at it!
