Credit for this recipe goes to my dear friend, Frances “Franmom” Grier in Wilmington, Delaware. I was a single mom working too many hours with a 6 year old that was very picky about what she ate. To this day, almost 20 years later it is still her favorite. Whenever she visits it is her first request. Now that she has learned to make it herself, she doesn’t visit as often! This recipe is so easy and it takes less time to make than a microwave dinner! YUMMY!
Prep Time: 10 minutes
Cook Time: aprroximately 15 minutes
- 2 Boneless Chicken breasts, cut into bitesized chunks
- Salt & Pepper
- 1 can chunk pinapple in natural juice (juice drained)*
- 1 hunk of fresh ginger root peeled and thinly sliced or grated (approx 1-2 tablespoon grated)
- 2 tablespoons butter
- 4 cups cooked rice
- Chinese Fried Rice Noodles
- Soy Sauce
In large frypan, melt butter and add chicken chunks and ginger root. Saute until brown and chicken juice is no longer pink when stabbed. Add drained pineapple and stir until pineapple is warm. Remove from heat, cover and let stand for 5 minutes. Serve over hot rice, with noodles and soy sauce to taste.
*You can use fresh pineapple, peel, core and cut into bite size pieces. This recipe will use approximately 1/2 of a fresh cut pineapple. You can use the rest for breakfast or a snack!
